Loaf cakes (or quick breads) are extremely delicious and very easy to make. They require minimum baking equipment and ingredients. The best part is, even if you are relatively new to the world of baking, loaf cakes won’t be a challenge. A loaf cake is a cake that is baked in what is traditionally considered a bread mould. There are a number of types and ingredients you can combine to make a loaf cake.
Whether it’s for a light snack or a full blown dessert, there’s no denying that almond cake is great. This treat is easy to make and tastes great, especially when paired with the zestiness of lemon. I’ve modified the recipe slightly to suit my tastes. Once you’ve baked it a few times, you’ll get an idea of how you can jazz it up. Because almonds are so versatile, there are a number of combinations you can try.
what you need
- 2/3 cup softened butter
- 2/3 cup brown sugar
- 2/3 cup all purpose flour
- 2 oz. ground almonds
- 2 large eggs
- Zest and juice of 1 lemon
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon vanilla extract
what to do
- Preheat the oven to 150-170 degrees.
- Sift flour, baking powder, soda bicarb and set aside.
- Grease the loaf tin with butter and dust it with flour.
- With an electric mixer, whisk cream, butter, and sugar until it is light and fluffy.
- Add one egg at a time and beat.
- Add the zest and juice of a lemon, vanilla, and the almonds and mix it well.
- Finally, fold in the flour mixture and pour it into the tin. Bake for about 30 to 40 minutes, or till done.
This recipe makes about a 2 pound cake. You can add icing or any other toppings, but these are optional as the cake has a unique flavor of its own. Almonds are also extremely nutritious in any form, so you don’t have to worry about the damage it will do to your diet. While it isn’t calorie free, it is lighter than most other cake varieties.
