Finally! A Caesar dressing recipe for vegans!
I love Caesar dressing, but I don’t love the anchovies.
This vegan Caesar dressing recipe is great for vegans and those who are looking to prepare a healthy meal for someone special. In other words, no anchovies and a little bit of garlic leaves the breath in great shape for a little bit of dessert (aka after dinner smooches).
Ingredients:
- 2 handfuls of raw cashews
- 1/2 medium size garlic clove
- 1/4 cup of olive oil
- 1/4 cup of water
- 1 table spoon of apple cider vinegar
- 15-20 capers to taste
- salt & pepper to taste
Instructions:
Wash and prepare salad bed and additional toppings.
Use romaine as a bed and if you’re not sure what else you’d like to add (you don’t have to add anything else if you don’ feel like it). Here’s what I added:
- Red peppers
- Green olives
- Carrots
- A sprinkle of salted pumpkin seeds for an added crunch
- Cucumbers
- Tomatoes
Blend all dressing ingredients in a blender until smooth. Drizzle over salad bed of romaine and toppings of choice and serve.
