Mung beans are high in Vitamin K, which is essential for the process of blood clotting. It also regulates bone mineralization and helps maintain bone density. Mung beans are also high in folate, a B vitamin that is critical for creating DNA, producing and maintaining new cells, and making healthy red blood cells. These functions make it an essential vitamin for everyone, but it’s especially important to support periods of growth from conception through adolescence. So give this snack to your kids!

  2. I like to have mung beans sprouting on my counter top. They take about 7 days to complete their sprouting cycle. If you don’t have mung beans, substitute hemp seeds, sunflower seeds, or flax seeds for more protein.
