Our feature interview was with Bart Potenza of Candle 79 and Candle Cafe in New York – both offering yummy vegan fare along with an increased awareness of animal rights and the work Bart has done to support Farm Sanctuaries, like the one in Watkins Glen, New York.

An interesting discussion on just how eco-friendly bamboo is or isn’t, sparked by the idea of using an eco-friendly cutting board in the kitchen. We weighed out the pros and cons.
