Kale kicks a**.
I didn’t grow up eating kale.
Honestly, I didn’t even know this leafy powerhouse of a leafy green vegetable existed until I was approaching middle age—even though it’s been cultivated for over 2,000 years! Where had kale been hiding? (Admittedly, I didn’t even know about yogurt or lox and bagels until I went to college… apparently I was leading a sheltered existence.)
And now kale is everywhere! In fact, I just put kale in the chili I made last night as an experiment. And you know what? It was delish. Plus, it was a sneaky way to slip this superfood into my family’s meal. Bwahaha!
There are so many ways to get kale into our diet: You can buy crunchy kale chips in a multitude of flavors (or make your own)… toss it in smoothies and juices… or sautee it with garlic and sea salt. Yum!
