It is a cold and rainy day here at GD HQ. I should be craving hot soup or something, right? But, what I really want is veggies – fresh, crunchy, lovely veggies. Oddly enough, I just don’t feel like cooking, but chopping and prepping? Sure! Plugged in my earbuds and some new music I purchased recently and started yanking all the veggies I had in the fridge out to observe and contemplate what to do with them.
A nice raw winter salad is just the thing! I decided that a marinated broccoli, mushroom, carrot melange was just the thing! So, with Gracie Mae, the rather large dog in my small kitchen, under my feet, I started washing, chopping and peeling the veggies at hand.
I added a few more of my favorite marinated salad goodies: raisins, sprouted sunflower seeds, some chia seeds, and whipped up my favorite marinate/dressing.
Unfortunately, I really need to let it sit for an hour or so, but I’m starving!
So, I have more tea and play with my iPhone camera while I wait.
