Another Meatless Monday: Best Vegan Nut Loaf Ever

GD Meg's awesome nut loaf imageInspired by Green Diva Gina’s recent National Pistachio Day post, I decided to get creative and make a vegan nut loaf using an unusual mix of nuts for a hearty vegan family dinner. The full menu included shaved brussels sprouts sautéed with onion and fake bacon and my daughter Mary’s delicious wild mushroom risotto. With a salad or whatever you like, this nut loaf is an excellent dish for another Meatless Monday.

  1. 2 Tbls olive oil
  2. 1/2 onion chopped
  3. 2 carrots finely chopped
  4. 6 mushrooms finely chopped
  5. 2 Tbls white cooking wine
  6. 1 - 2 cloves garlic crushed
  7. 1 1/2 cups combination of your favorite mixed nuts (I used tamari almonds, macadamia nuts, pistachio nuts, walnuts, cashews)
  8. 5 pieces of your favorite gluten-free bread
  9. 1 cup vegetable broth
  10. salt & pepper to taste
  1. Preheat oven to 350 degrees.
  2. Sautee vegetables in the olive oil until onions are translucent.
  3. Add cooking wine and garlic and cook for another 2 minutes, and set aside.
  4. Grease a loaf pan.
  5. using a food processor or good blender, chop nuts and bread fairly finely and consistently.
  6. Mix it all together in a large bowl with the vegetable broth, adding salt & pepper to taste.
  7. Pack it all into the greased loaf pan and bake for 30 minutes.
