I love pickles… well, pretty much almost anything pickled! But I’m not the most patient person, so I’m always looking for quick, refrigerator pickling ideas.

Up at GD Studio north (Portland Maine), GD Lisa and I had a hankering to pickle something quick and easy and decided the radishes in the local store looked kinda ravishing, so we pickled them. We kept it kinda simple and used only a few ingredients that she had handy. It was ridiculously simple and the jar almost immediately started turning a really pretty shade of deep pink. Hey, who doesn’t love a pretty jar of easy pickled radishes, right?

pretty, delicious, quick & easy pickled radishes

what you need
1 glass jar w/ good lid (8 – 10 oz.)
1 bunch fresh radishes (6 – 10 radishes depending on size & size of jar)
6 – 10 cloves fresh garlic 
1 teaspoon of whole peppercorns
1 – 2 cups white vinegar (enough to almost fill jar)
1 teaspoon good sea salt
1 teaspoon raw sugar
what to do
wash your radishes, then slice into thin, uniform pieces.
put sliced radishes, raw cloves (sans skins) and peppercorns in the jar.
fill jar till just about the top of the jar with white vinegar.
add salt and sugar.
shake it up and put in the refrigerator for three days, giving it a good shake every day.
These little slices of deliciousness are great for salads (obviously), but also great for any kind of veggie bowl recipe, with rice or grains, etc. Get creative. Yum!

    I live in Portland Oregon. If you ever watched Portlandia, there is an episode about pickling, they say “I can pickle that’! I love to pickle! Pickled radishes I think are better than fresh! I did a Dakon and red radish pickle, yummy.
