Inspired by Green Diva Gina’s recent National Pistachio Day post, I decided to get creative and make a vegan nut loaf using an unusual mix of nuts for a hearty vegan family dinner. The full menu included shaved brussels sprouts sautéed with onion and fake bacon and my daughter Mary’s delicious wild mushroom risotto. With a salad or whatever you like, this nut loaf is an excellent dish for another Meatless Monday.
